Keto Fudge Brownies That Will Change Your Mind

My husband recently decided to give the Keto diet a whirl, which means I get to experiment and try a few new recipes for fun. The poor guy has had to mussel down quite a few of these experiments gone wrong this past week. But now that I have a winner I had to share it with everyone! The Keto diet is not a fan of sugary sweets which makes dessert time even more of a challenge. But this should definitely help with that sweet tooth at the end of the day.

INGREDIENTS:
- 1/2 cup almond flour - 2 oz dark chocolate
- 3 eggs at room temperature - 3/4 cup Stevia (or Erythritol, Truvia)
- 12 tbsp butter softened - 1/2 tsp baking powder
- 1/4 cup dark cocoa powder - 1/4 cup macadamia nuts (optional)
DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Line with parchment paper an 8×8-inch baking pan covering the bottom and the sides.
3. In a glass bowl mix the butter and the dark chocolate. Microwave for 30 seconds. Yes I know, my jaw dropped when I saw just how much butter was going into this as well.
4. In the meantime, combine the dry ingredients: almond flour, sweetener, cocoa powder, baking powder in a separate bowl.
5. Crack all three eggs into the bowl with the chocolate and butter mixture. Then beat the mixture until smooth.
6. Slowly mix in the dry ingredients, until you get brownies batter consistency. Batter may seem a bit grittier depending on the sweetener you choose.
7. If you are adding any kind of nuts to your brownies now would be the time to do it.
8. Transfer the batter to the baking pan and bake for 20 minutes. Depending on the oven you have the baking time may vary. You’ll want to check the brownies from minute 5 after the timer goes off to make sure you aren’t overbaking them. The center has to be slightly moist when touching.
