Harvest Chicken Cassoulet

INGREDIENTS:
- 6 skin-on boneless chicken thighs Garlic Bread Crumble Topping Ingredients:
- 1/2 lb of bacon - 2 Tbsp extra virgin olive oil
- 1 Large sweet onion - 1 clove garlic minced
- 2 carrots chopped - 3 slices of dried bread
- 4 cloves of garlic (minced) - Kosher salt & Pepper
- 1/2 cup white wine
- 2 cups of cannellini beans
- 1 bay leaf
- 1/2 cup chicken stock
- Salt and pepper to taste
DIRECTIONS:
1. Preheat oven to 350 degrees. Rinse and dry off chicken with paper towel. Sprinkle chicken with salt and pepper. Let rest for 10 minutes.
2. Using a large cast iron pan or dutch oven, cook the bacon. Once the bacon is crispy remove to a plate off to the side. You can crumble the bacon up for future use in this recipe.
3. Add the chicken skin side down to the bacon fat remaining in the cast iron pan. Cook on medium to medium-high. Once the chicken has been cooked through remove from the pan and set aside with the bacon.
4. Add onion, garlic and carrots to the cast iron pan and saute until the onion becomes translucent.
5. Using the white wine, deglaze your pan. Let this reduce down to half and then add in your bay leaf and cannellini beans.
6. Add your chicken back to the pan. Make sure to position the chicken skin side up and touching the bottom of the pan.
7. Add your chicken stock to the pan along with crumbled crispy bacon. Turn heat off, cover pan with foil or a lid and place in the oven to finish for 20 minutes. This gives you the perfect timing to make your garlic bread crumble topping.
8. Once your chicken comes out of the oven it's ready to serve to your family or guests with your garlic bread crumble
Garlic Bread Crumble Topping:
1. Using a small saute pan add olive oil and minced garlic.
2. Crumble up your dried bread and add this to your saute pan. Saute until bread becomes golden.
3. Season with salt and pepper to taste.
4. Using a food processor add your bread mixture and process on a low setting until the bread becomes the size of breadcrumbs.
